Aparte, saltear los langostinos en aceite, un minuto de cada lado. Descartar el aceite, flambear con el cognac y retirar los langostinos (mantenerlos al calor). En la misma sart\u00e9n, agregar la manteca y saltear la echalote picada. Mezclar el pat\u00e9 de trucha o salm\u00f3n con el vino, agregarlo al sart\u00e9n y cocinar 2 o 3 minutos sin dejar de revolver. Incorporar el mascarpone, mezclar dos minutos m\u00e1s, agregar los langostinos y cocinar un minuto (para calentar).
